Not gonna lie, my hubby and I have big plans for the evening. They involve sitting on the patio, grilling burgers, and sipping raspberry-lime seltzer. (Alright fine, I’ll probably be enjoying that last part on my own while someone else sips on a cold beer…)
Burgers are a classic choice for 4th of July, but if you’re looking for something else, how about one of the following?
Start with some chips and homemade salsa or guacamole to munch on while the grill is firing up.
To cool off, serve a light and refreshing caprese salad. Doesn’t get much better than this.
If you’re intent on sticking with burgers, but want something other than beef, try these bbq chicken burgers which are a-mazing.
Another poultry option is bourbon-honey bbq pulled chicken. Serve a la carte or piled high on a roll.
If we weren’t already planning to grill burgers, I’d definitely be making these ribs again. Tender, fall-off-the-bone, juicy baby back ribs. Perfect at a July 4th celebration!
For a fun seafood option, you can’t go wrong with these colorful fish tacos:
Or, if you can get your hands on some fresh soft shell crabs, this sandwich will knock your socks off: soft shell crab BLT with tarragon aioli.
Not interested in anything heavy? Try a grilled pizza. (I’m a fan of this bbq chicken combo, which would be fantastic on the grill.)
For the non-meat eaters in your group, make these black bean patties with corn relish. (We just had these last week… really delish.)
Or, another veggie favorite of mine, roasted (or grilled!) vegetable couscous.
And, of course, no cookout will ever be complete without these to-die-for grilled vegetables. Ridiculously simple to prepare, and ridiculously full of flavor!
Round the evening out with something cool and refreshing: key lime pie tart or lemon bars oughta do the trick.
To those of you who will be drinking cold white wine, frozen margaritas, or delicious mixed cocktails throughout the evening: I hate you.
Okay, not really. But I’m totally jealous. Have a drink for me and baby!
