I remember the first time I made this quiche. It was approximately two hours before I made it a second time.
It came together so easily and was so delicious that I decided to make a second one to freeze.
There’s something comforting and familiar about broccoli and cheddar together. But my favorite part? The scallions. They add a little zing to the dish.
And of course you could add a pie crust or tart dough to this, but (a) this is healthier without, and (b) I was already planning to make a free form tart the next day, so… crustless it is! But trust me, with the amount of cheese in here you’ll still have something to feel a little guilty about.
Oh, and then there’s the cream. I was a little surprised that this recipe only called for three eggs. I mean, it’s a quiche. Shouldn’t it be mostly eggs?
No, apparently it should be mostly heavy cream.
Perfect for breakfast, lunch, dinner, a 3 am snack, and potlucks. Guys, this is heavenly, insanely creamy, and obviously very healthy for you because of all the broccoli.
